Summers are made for salads — big, green leafy salads filled with all the great produce the season has to offer. Salads are quick, easy, require minimal preparation, and are the perfect way to enjoy all the produce that’s in season now. The colors are amazing and creating a colorful palette for your friends and family makes them feel special. Remember we eat with our eyes first!

Twice-Baked Twins

Whether you serve your salad before dinner or as your dinner, get creative and try new blends of greens. There are a variety of lettuces available from red and green leaf to butter and butter crunch lettuces!! Combining different fruits and berries adds color as well as some great antioxidants. For a quick dinner top with spicy grilled shrimp or maybe a chile lime marinated steak. The possibilities are endless.

When we add fruits and berries to the salad, not only are the colors spectacular but they have high levels of phytochemicals, those naturally occurring nutrients that help protect our cells from damage. Berries are also a better choice for diabetics when used as one serving. So scoop up some blueberries, strawberries, raspberries, and blackberries and start munching.

We have chosen blackberries for our salad. They have one of the highest antioxidant level of all fruits and the pop of color in the salad is amazing as it plays off the tones of the greens. The pale hue of the melon sets off the darker color of the arugula as well as bumping up the vitamin C and potassium. So load up on those fruits and berries and get creative with your summer salad!!!

Spectacular Summer Salad

1 package of arugula

1/2 honeydew melon, cubed

1 pint blackberries

feta cheese crumbles

Dressing

1 cup olive oil

1/4-1/2 cup vinegar of choice

3 cubes melon

4 blackberries

1 teaspoon onion powder

1 teaspoon garlic powder

2 teaspoons agave

salt and pepper

In a food processor or blender (we used our Nutribullet), add 1 cup good quality olive oil, vinegar, fruits, agave. Blend until smooth. Taste, adjust seasonings and add the salt and pepper to taste.
